    摘要: 現代人因為飲食內容改變、環境壓力及抽菸喝酒,引發胃潰瘍出血,成為常見的健康問題。秋葵是臺灣普遍食用的蔬菜,從生活經驗知道對胃腸道有益處,根據前人研究顯示食用秋葵有助於穩定血糖、預防癌症及降低罹患心血管疾病的風險。也有研究證實,秋葵的酒精萃取成分及種子黏液能夠改變為胃黏膜黏液分泌量,進而降地酒精引發之胃潰瘍。本研究計畫開發黏液粉末及果肉粉末,用於胃部保健。黏液粉末以泡水和低溫乾燥方式製作,果肉粉末以真空冷凍乾燥方法製作。本研究進一步研究不同加工方式製作的秋葵產品保護功效。動物實驗顯示酒精(5mL kg^(-1)B.W.)投與一小時後可以引起胃黏膜出血。連續餵食大鼠黏液粉末(1g kg^(-1)B.W.)、果肉粉末(0.05g kg^(-1)B.W.)或ranitidine(50mg kg^(-1)B.W.)七天後,以酒精引起胃潰瘍,再計算出血面積及組織病理切片檢查評估秋葵產品的保護作用。我們的結果顯示果肉粉末溶液能夠減少酒精引起的胃出血面積約40%,與抗胃潰瘍藥物的效果相同,黏液粉末溶液大約減少10%胃出血面積。本研究的結果可以應用在未來開發胃相關的機能性產品,以提高本土農產品的價值。
    Nowadays gastric disorder become a common health issue worldwide. The severe gastric disorder caused by dietary content changes, stressed environment, cigarette smoking, and alcohol consumption. The Okra (Abelmoschus esculentus) has been regarded as an efficient treatment due to its therapeutic effect in curing peptic ulcers and beneficial effects on the gastrointestinal tract in Taiwan. According to previous studies, the consumption of okra helps to stabilize blood sugar levels, prevent cancer, and reduce the risk of cardiovascular disease. Also, the ethanol-extract components of okra and seed mucus can change the amount of mucus secreted by the gastric mucosa, which reduce gastric ulcers caused by alcohol. Consequently, in this study, we planned to develop mucus powder and pulp powder for stomach preservation. Mucus powder was prepared by water soaking and cool drying of okra pulp or seed; pulp powder was prepared by vacuum freeze drying and grinding of pulp. This study further explored the effects of different sources or processes of okra. Animal experiments showed that alcohol (5mL kg^(-1) B.W.) administration for one hour can cause gastric mucosal bleeding. We conducted the pretreatment of rats with mucus powder (1g kg^(-1) B.W.), pulp powder (0.05g kg^(-1) B.W.), or ranitidine (50 mg kg^(-1) B.W.) for 7 days. After the ulcer induction, we compared the histopathological examination of three different treated group. The histopathological examination was used to assess the okra powder's protective effects by calculating the amount of the bleeding area in the gastric mucosal. The results showed that the pulp powder solution reduced the gastric bleeding area by around 40%, which was the similar to that of the anti-gastric ulcer drug, and the mucus powder solution reduced the bleeding area by near 10%. The study results can be applied to develop gastric-related functional products in the future and thereby expand the application value of indigenous agricultural products.
