    Title: 光質及乾燥方式對芫荽光生理及抗氧化能力之影響
    The effect of light quality and drying method on photophysiological characteristics and antioxidant capacities in Coriandrum sativum

    Abstract: 芫荽(Coriandrum sativum),具有豐富的營養素,包含了維生素A、維生素C、維生素K、鈣、鐵、鋅、膳食纖維等。已有研究證實,芫荽具有降血糖、降血脂、抗菌與抗氧化的作用,為一種取得容易且具研究價值的作物。不同光質會影響植物的生理反應和代謝產物,可以利用溫室或植物工廠的模式控制這些生長條件為作物創造更高的利用價值。本研究以水耕法加上6種不同LED組合光照處理的芫荽為材料,經由冷凍乾燥及熱風乾燥(40°C、60°C、80°C)處理後,測量其抗氧化物及抗氧化能力,探討不同光質對於芫荽生長、抗氧化物含量及能力的影響。結果顯示50 µmol m-2s-1的紅光及藍光處理下有最大芫荽葉面積為30.9平方公分,50 µmol m-2s-1的藍光處理下螯合亞鐵離子能力最高73.88%,200 µmol m-2s-1的藍光處理下清除DPPH自由基能力最高87.91%,200 µmol m-2s-1的紅光及藍光處理下會抑制芫荽株高並促進總酚含量的積累。在不同光強度的紅光及藍光處理下,抗氧化物含量與乾燥方式之間皆無顯著的直接影響關係,清除DPPH自由基能力於80°C熱風乾燥處理下最高86.58%,還原力(OD值)於冷凍乾燥處理下最高0.863,螯合亞鐵離子能力於60°C熱風乾燥處理下最高67.57%。期望本研究結果未來可以作為芫荽生產中增進營養價值的參考。
    Coriander (Coriandrum sativum) is rich in nutrients, including vitamin A, vitamin C、vitamin K、calcium ion、iron ion、zinc ion、dietary fiber, etc. Many studies confirmed that coriander plants have the effects of lowering blood sugar, blood fat、antibacterial, and antioxidation. It is easy to obtain and has a research value, such as different light qualities affect its physiological reactions and metabolites under a greenhouse or plant factory mode to for controlling these plants’ growth conditions and to creating higher utilization values. In this study, coriander plants were grown hydroponics system subjected to 6 different LED combinations. After freeze-drying and hot-air drying (40°C, 60°C, 80°C) processing, its antioxidant capacity was measured for studying the effect of different light quality on the growth, antioxidant content, and antioxidant capacity of the tested plants. The results show that the maximum leaf area was 30.9 cm2 at 50 µmol m-2s-1 PPFD for red and blue light treatment. The highest chelating capacity of ferrous ions is 73.88% at 50 µmol m-2s-1 PPFD, and the DPPH free radical scavenging capacity was is 87.91% at 200 µmol m-2s-1 PPFD for the blue light treatment. The red and blue light treatment inhibited the plant height and promoted the accumulation of total phenol content at 200 µmol m-2s-1 PPFD. Under the red and blue light treatments with different light intensities, there was is no direct relationship between the antioxidant content and the drying method. The DPPH free radical scavenging capacity was is max to 86.58% under 80°C hot air drying. The maximum of reducing power (OD value) is 0.863 under freeze-drying treatment. The capacity to chelate ferrous ions was is max to 67.57% under 60°C hot air-drying treatment. It is expected that the results of this study can be used as a reference for improving the nutritional value of coriander in the future.
