老年人由於生理結構改變,眼睛以及咀嚼吞嚥功能逐漸退化而使得飲食與生活品質下降。菊花與枸杞子在中國是一般常用的食品、飲品或傳統醫藥,已知菊花(Dendranthema morifolium)與枸杞中皆含有豐富的酚類化合物、黃酮類以及抗氧化維生素而有多種的生理功能。在中國、韓國和日本等國家亦被當作用於治療眼部疾病的傳統藥用植物。故本研究以傳統飲用方式進行杭菊/枸杞子熱水浸泡所得之萃取液進行:(1)凍乾後萃取物之抗氧化與對人類水晶體上皮細胞(HLE-B3 cell)氧化壓力(過氧化氫/糖化)的保護作用之研究;(2)製造適合銀髮族食用之杭菊/枸杞子凍飲產品,並比較不同比例之杭菊/枸杞子熱水萃取物添加是否有助於產品的抗氧化能力。此計畫同時具有應用以及基礎學術之重要性,可以發展以銀髮族或糖尿病患者為對象開發易於咀嚼吞嚥的杭菊/枸杞子凍飲產品,針對一般需護眼的消費者則可開發菊花/枸杞子萃取物機能性補充品。
As the physiological structure changes with age, the elder’s eyes and chewing and swallowing functions are gradually degrades, which leads to a decline quality of diet and life. In addition, Chrysanthemums and goji Berryare common foods, drinks or traditional medicines in China. They are also used as a traditional medicinal plant for the treatment of eye diseases in countries such as China, Korea and Japan. Chrysanthemum (Dendranthema morifolium) and goji Berry (L. Chinense Mill.) are known to be rich in phenolic compounds, flavonoids and antioxidant vitamins and have various physiological functions. In the present study, we used the traditional drinking method to carry out the extract obtained from the hot water soaking of harngju and goji berry. (1) Study on the antioxidant activity of the extract harngju and goji berry and the protective effect on the oxidation pressure (hydrogen peroxide/saccharification) of HLE-B3 cell (human epithelial cells). (2) Manufacture of harngju and goji berry soft agar drink products to suitable the senior citizens, and compare whether different proportions of harngju and goji berry hot water extracts can contribute to the antioxidant capacity of the products. This project has both application and basic academic importance. It is possible to develop the harngju and goji berry soft agar drink product that is easy to chew and swallow of senior citizens or diabetes patients. Harngju and goji berry extract functional supplements can be developed for consumers who generally need eye protection.
