    Abstract: 主題餐廳旨在為顧客提供不僅餐食,而且還提供娛樂體驗。近年來,由於人們的飲食習慣和用餐習慣的改變,主題餐廳在台灣的普及程度迅速提高。卡通與動漫涉入餐廳當作裝潢,形成主題餐廳,主題餐廳興起正象徵著新世代的消費者欲擁有不一樣的消費體驗,追求獨特個性化的消費方式變成為消費者彰顯自我的表現方法,成為一種時尚潮流。為了迎合這些變化,越來越多的卡通主題餐廳在台灣設立了美食特色和獨特的主題氛圍,為顧客提供非凡的用餐經驗。然而,人們對什麼是消費者期望值以及他們為何會選擇卡通主題餐廳用餐的了解勝少。為了解消費者在選擇卡通主題餐廳時,對於實體環境與食物品質的想法,以及其顧客價值和行為意圖。本研究通過發放問卷調查評估授權卡通主題餐廳消費者的便利抽樣,探討實體環境與食物品質對顧客價值及行為意圖的影響。結果可以為主題餐廳所有者/管理者提供關於顧客價值與服務績效發展和營銷策略相關的進一步見解。
    Generally, theme restaurants were designed to provide customer with not only meals, but also an entertaining experience. In recent years, theme restaurants have a rapid rise in popularity in Taiwan due to changes in people’s diet and habits of dine out. To meet these changes, more and more theme restaurateurs have established in Taiwan with fancy gourmet food and unique theme ambience to provide an extraordinary dining experience to customers. In order to have an understanding of customers’ behavior in relation to consumer value of restaurant physical environment and food quality in selecting theme restaurant. This study explores the influence of physical environment and food quality on consumer value and behavioral intentions for cartoon them restaurants by distributing structured questionnaires to judgmental sampling of licensed theme restaurant customers. The results can offer theme restaurant owners/managers further insights of customers’ perceived experiential value in relation to service performance development and marketing strategies.
