摘要: | 為瞭解本省目前栽培最普遍之二青椒品種"天王星"及"藍星"之果實在發育期間之理化成分變化及其差異,以青椒開花後日數為果實成熟度之指標,測定果實體積、重量、維生素C、水分含量、總可溶性固形物等含量之變化以及果膠酯酵素活性之變化。 結果顯示,青椒果實之生長曲線屬於單S形曲線(single sigmoid),其中"藍星"品種果實之發育較"天王星"品種為慢,分別於開花後約45天及37天進入生長緩慢期。在果實發育期間二者之水分含量維持在93-94%之間,維生素C含量及總可溶性固形物含量則均隨果實之發育而增加,果膠酯酵素之活性則隨果實發育漸趨下降。維生素C含量與果膠酯酵素活性之變化均與果實之生長曲線呈相關性,惟此二品種,以"藍星"之維生素C含量(250.450mg/100g)及總可溶性固形物含量(3.5-4.3° Brix)較"天王星"為高(分別為100-250mg/100mg,3.0.4.0°Brix)。
In order to elucidate the compositional changes of sweet pepper during fruit development, the fruits were picked by 4-day-interval, and sampled for measuring the fruit weight, fruit volume, contents of L-ascorbic acid, moisture, and total soluble solid and activities of pectin esterase. As to the results, the growth curves of sweet pepper showed a single sigmoid pattern. The total development period of 'Blue Star' cultivar was longer than that of 'Uranus'. The growth of the fruits of 'Blue Star' slowed down 45 days after full bloom, and that of 'Uranus' slowed down 37 days after full bloom. The water content was 93-94% in both cultivars, and the content of L-ascorbic acid as well as the total soluble solid in-creased. The pectin esterase activities decreased during development. Both pectin esterase activity and L-ascorbic acid content had good relation with fruit weight. |
