Protein-based scaffolds have the potential to mimic the native extracellular matrices, but they suffer from the poor water stability, especially those with ultrafine fibrous structures. Therefore, modifications are required. In this research, the crosslinking modifications using citric acid as the crosslinker were developed based on the properties of 2D electrospun and 3D phase separated fibers from plant proteins or proteins with limited available functional groups. It was proven that the citric acid modifications could efficiently improve the water stability of the protein ultrafine fibrous scaffolds. Compared with the poly (lactic acid) scaffolds, these developed scaffolds were more cytocompatible and could promote cell attachment and proliferation.
