本研究研究目的欲利用重要-績效缺口分析(IPGA)來衡量消費者對中高級餐廳之食品品質的表現,作為餐廳業資源重新分配的依據。在研究設計方面,本研究以台北市8家中高級餐廳之顧客為研究對象,有效回收問卷達502份。本研究結果顯示,在25個食品品質題項中,有11個項目是主要待改善因素,其菜色2項、風味3項、烹調2項、衛生3項、其他1項,其中衛生方面是最優先改善的品質項目。根據此研究結果,本研究期望透過IPGA可以更客觀與精確地探討餐廳業的食品品質,提供管理者服務策略規劃之參考依據。
This study aimed to measure consumer perception of food quality in fine-dining restaurants by using Importance-Performance & Gap Analysis (IPGA). This results were considered an important reference for the re-allocation of resources in the restaurant industry. In the study design, this study treated eight fine-dining restaurants customers in Taipei city as subjects, and collected 502 effective questionnaires. The study results found that 11 attributes are the priority factor to improve, among two items are dishes property, three items are tastes property, two items are cooking property, three items are cleaning property, and one items is other property. Three items of cleaning properties are the highest priority for improvement. According to the result, this study expected to be more objective and accurate to explore the food quality in the restaurant industry by using IPGA model, to provide a reference for managers in strategic planning services.
