    Abstract: 由於植物細胞在一般生化代謝的反應過程中無法避免的會有因氧化作用而產生過氧化物質,因此為了將過氧化物質去除發展出了抗氧化系統來減低氧化作用所造成的傷害。抗氧化系統主要是在移除過量的超氧根及過氧化氫;抗氧化系統由一些相關酵素如超氧歧化[]、過氧化[]或抗壞血酸氧化[]、穀胱甘[]還原[]、過氧化氫[]及非酵素物質如抗壞血酸(維生素C)、穀胱甘[]等組合以去除過量之過氧化物質。本文報導植物於各種逆境下其抗氧化系統所受影響及應用基因轉殖技術於植物抗氧化機制之研究。
    Plants possess an antioxidant system to overcome the damaging effects of reactive oxygen species. The antioxidant system constitutes the enzymes and non-enzyme defense molecules including superoxide dismutase, peroxidase, ascorbate, glutathione reductase, catalase, ascorbate, and glutaathione. This article addresses the response of this antioxidant system of plants under some stress environments and the use of transgenic plants in understanding the mechanism of antioxidation of plants.
