    題名: 臺北地區國小學童的無肉日飲食知識、態度與行為相關性之研究
    The Study on the “Meatless Day” Diet Knowledge, Attitudes and Behavior for Elementary School Students in Taipei Area

    摘要: 本研究目的在了解臺北市及新北市地區國小高年級學童(六年級為主)無肉日飲食知識、態度及行為之現況,並探討三個變項之間的相關性。匯集整理並參考相關研究文獻後,設計一份自填問卷,內容包括個人背景因素、無肉日飲食知識、態度與行為量表進行調查,以立意取樣方式選取研究對象,得有效問卷400份。本研究結果整理如下:
    一、 受測者以男性學童較多。
    二、 受測學童以六年級為主。
    三、 無宗教信仰者居多(53%),其次為道教(21.3%)。
    四、 體重正常學生比例為63.5%。
    五、 主要的無肉日飲食資訊來源是老師。
    六、 「無肉日飲食知識」總共12題,平均每人答對6.9題,有一半以上的人能答對7題以上(61.0%),整體答對率是71.5%。
    七、 「無肉日飲食態度」以李克特五點量表計分,各題平均得分3.23分。
    八、 「無肉日飲食行為」以李克特五點量表計分,各題平均得分3.27分。
    九、 不同背景變項在無肉日飲食知識、態度及行為之差異性分析
    (一) 不同性別的國小學童在整體「無肉日飲食知識」無顯著差 異。女生在飲食知識分項「無肉日飲食對健康的好處」顯著優於「男生」。
    (二) 不同性別的國小學童在整體「無肉日飲食態度」及其分項皆有顯著差異。
    (三) 不同性別的國小學童在整體「無肉日飲食行為」無顯著差異。其分項「無肉日飲食內容」達顯著,「女生」優於「男生」。
    (四) 不同體位的國小學童在整體「無肉日飲食知識、態度與行為」均無顯著差異。
    (五) 不同個人背景變項的國小學童在「無肉日飲食資訊來源」均無顯著差異。
    (六) 不同個人背景變項的國小學童在「無肉日飲食資訊來源」皆最多從「學校老師」獲得。
    十、 本研究發現在總分方面,「無肉日飲食」知識與態度無顯著相關,在知識與行為方面也沒有顯著相關,然而在態度與行為方面有顯著正相關。本研究結果建議應該協助學童發展正向的無肉日飲食態度,以養成良好的飲食行為。
    The purposes of this study were to investigate the current status of the “Meatless Day Diet” knowledge, attitude and behavior for senior elementary school students in Taipei and New Taipei Cities, the major participants were grade six students. The correlations among these three variables were also studied. After literatures review, we developed a self-administered questionnaires which included individual background factors, “Meatless Day Diet” knowledge, attitude and behavior were used to collect data. The research participants were recruited by purposive sampling and 400 valid samples were collected for statically analyses.
    The following is a list of results of this study.

    1. The number of male participants were more than female participants.
    2. The number of grade six students were more than grade five students.
    3. The majority of participants indicated they do not have religious affiliation (53%), the second majority was Taoism (21.3%).
    4. The percentage of body weight in normal range students was 63.5%.
    5. Teacher lectures are the most important information sources of “Meatless Day Diet”.
    6. The average score for “Meatless Day Diet” knowledge questionnaire was 6.9 in 12-questions measurement. The average correct response rate was 71.5% for total measurements.
    7. In the measurement of the “Meatless Day Diet” attitude questionnaire with five-Likert scale, the average score for each question was 3.23.
    8. In the measurement of the “Meatless Day Diet” behavior questionnaire with five-Likert scale, the average score for each question was 3.27.
    9. The following is a list of the results of the differences related to individual background factors in the aspects of “Meatless Day Diet” knowledge, attitude and behavior.
    (1) There was no significant difference between male student group and female student group in total score for “Meatless Day Diet knowledge” knowledge. However, average score of female group in one dimension of knowledge, health benefits of Meatless Day Diet, is higher than that of male group.
    (2) There were significant differences between male group and female group in total score for “Meatless Day Diet attitude” and neither for attitude dimensions.
    (3) There was no significant difference between male student group and female student group in total score for “Meatless Day Diet behavior”. However, average score of female group for one dimension of behavior, dietary content of Meatless Day Diet, is higher than that of male group.
    (4) There were no significant differences among all physique rating groups based on body mass index in “Meatless Day Diet” knowledge, attitude and behavior.
    (5) There were no significant differences in information sources of “Meatless Day Diet” among all student groups with different individual background.
    (6) The major information of “Meatless Day Diet” for most Students was obtained from teachers’ lectures.
    10. There was no significant correlation between total score for knowledge and attitude of “Meatless Day Diet”. There was also no significant correlation between knowledge and behavior. However, there was significant positive correlation between attitude and behavior of “Meatless Day Diet”. These finding suggest that parents and teachers should help elementary school students develop positive “Meatless
    Day Diet” attitude, in order to develop good dietary behavior.
