摘要: | 本研究目的為探討北部地區大學院校餐飲管理系學生對營養標示之知識、態度與使用行為,本研究採用問卷調查法,共發放正式問卷600份,有效問卷535份,回收率為90%。研究工具以自編問卷包括營養標示知識量表、營養標示態度量表、營養標示行為量表。所得資料以描述性統計、單因子變異數分析及雪費事後比較、獨立t檢定、皮爾森積差相關作分析。結果顯示營養標示知識平均答對率為60.2%。營養標示知識量表構面以每日營養素攝取量基準答對率最高。高年級優於低年級,自身或家人有罹患疾病優於自身或家人無罹患疾病,有修過營養相關學分優於無修過營養相關學分。營養標示態度量表構面以健康信念最高。高年級優於低年級,住家裡或親戚家優於學校宿舍及校外租屋。營養標示行為構面以選購行為最高。女性優與男性,高年級優於低年級,自身或家人有罹患疾病優於自身或家人無罹患疾病,有修過營養相關學分優於無修過營養相關學分。北部地區大學院校餐飲管理系學生對營養標示知識、態度與行為三者成皆呈成正相關。
This study is focus on the research of the exploring nutrition labeling knowledge, attitudes and usage behavior of nutrition among food and beverage student's in northern Taiwan. Using cluster proportion sampling and accept 535 valid samples questionnaire , 90% response rate. Labeling knowledge scale, labeling attitude scale, and usage behavior scale were used as the to the results. To process the statistical analysis of the research, descriptive statistics, t-test , One-way Anova , Pearson’s product moment correlation .The results were an average score of 60.2% answered correctly about labeling knowledge. Labeling knowledge scale datum of value daily nutrient ingestion quantity scored higher. Higher grades are better than lower grade, suffer disease are better than no suffer disease , earn nutrition credit are better than no earn nutrition credit. Labeling attitudes scale datum of healthy beliefs higher. Higher grades are better than lower grade, live at home are better than dormitory and rent a house. Labeling usage behavior scale datum of pick behavior higher .Woman student better than male student , higher grades are better than lower grade, suffer disease are better than no suffer disease , earn nutrition credit are better than no earn nutrition credit. Statistical results showed positive significant relations among the nutrition labeling knowledge , attitude and behavior of college food and beverage student. |
