「辦桌」是臺灣漢人社會中常見的設宴飲食模式,往往被應用在婚喪喜慶與民間祭祀活動中。本文從發展流變、文化傳統、社會需求、產業結構與飲食特色的角度,來觀察臺灣的辦桌文化,並從中建構出一套核心理論-「共食」與「適食」。希望這樣的飲食論證,能有助於對臺灣的辦桌文化的深入了解。
"Banzhuo"(banquet catering)is a common banquet style in Taiwan society, it’s often used in weddings and folk worship activities. This thesis try to from the perspective of development, traditional cultural, social demand, industry structure and food specialties to observe Taiwanese "Banzhuo" culture, and from which to construct a set of core theory - "eating together" and "suitable eating".
I hope this dietetic argumentation can contribute to the understanding of Taiwanese "Banzhuo" culture.
