    題名: 家長對學校午養認知與態度之研究-以台北市士林區國民小學為例

    摘要: 本研究以台北市士林區公立國民小學學生之家長642位做爲問卷調查對象,採立意抽樣方式進行;研究工具包含個人背景資料調查表、午餐認知及午餐態度量表,採用描述性統計分析、t檢定、單因子變數分析、薛費事後比較及皮爾森相關等統計方法分析。參與調查的家長以女性較多;職業以家管居多;年齡以41歲-50歲者居多;教育程度以高中職居多;家長參與午餐工作,以增進午餐全面的品質提昇及家長忙碌對學校午餐意義不了解居多。在午餐認知題項,以家長對「HACCP意指食品危害分析重點管制」並不了解。在「請問您是否知道學校會安排家長參加學校日,介紹學校午餐狀況、並討論其他相關事宜」之瞭解程度排名較低。午餐滿意度最低之前5項皆在飲食內容構面,依序爲「午餐的色澤、每週供應乳製品的次數、午餐的口味、每次供應乳製品的份量、午餐的溫度等」。家長之瞭解程度會因性別之不同而有顯著差異;午餐重視程度會因性別及教育程度之不同而有不同顯著差異;午餐滿意程度會因教育程度之不同而有顯著差異;午餐認知、重視程度及滿意程度三者皆呈現非常顯著正相關;家長對學校午餐供應以「強化衛生、營養均衡、食物品質及對健康有益的食物」有最高的期望。
    The purpose of this research was studied at the effect of parents cognition and attitude on the elementary school lunch program. This research is using the "purposive sampling" method with 642 parents ensample from elementary schools of the shilin area. The parents' personal backgrounds, their understanding and attitude on school lunch program was analysed by the methods of descriptive statistics, T-tests, One-x ay ANOVA, Scheffes', and Pierson's correlation. Women and housewives were mostly of the parent's involvement. The age is in the majority by 41-50 years old: The high school duty, is the most among the parents. The parent’s involvement showed that "If parents were involved in preparing and setting the menus, overall qualities for the lunches would increase". However, the parents recognize that "they are already too busy to understand the lunches at school". In the mean time, they don't understand "the Hazard Analysis and Critical Control Points (HACCP)", and most of them don't know regarding back-to-school night meeting or discussing about lunch menus and nutrition to the parents. The lowest five pleasing aspects of the school lunch were related to the "content of the food eaten" itself indicated respectively as follow: the "color of the food", "frequency of dairy supplement of the school every week", "taste", "quantity of dairy supplement", and "food temperature". There was a significant difference between fathers and mothers about the "content of the food eaten" and the "understanding" of whole lunch program itself from the survey. The mother did show better understanding and more concern about theft child's lunch. Parents' sex and difference education background was also indicated the same result but the difference degree of influence to the "content of lunch", "eating environment", "eating manners and habits" and "overall importance respecially". Parents from "different education background" had significant different to the "environment of the eating" and the "overall importance" respecially. Parents view the "school lunch cognition", the "Importance" and "satisfaction" indicated they were very significant positive correlation among them. Therefore, we need to assist the parents to understand the school lunch program as possible as we can because of this will improve the school lunch program better.
