    Abstract: 學校的飲食營養教育課程和飲食供應環境對學生飲食行為養成非常重要,調查顯示,我國幼兒營養與飲食狀況不盡理想,幼兒營養教育不受教保人員重視,托兒所及幼稚園教保人員之營養知識、態度及行為都有待加強,且缺乏營養知能學習的環境與資源。在飲食供應環境方面,幼兒園所供應之午餐及點心營養品質不理想。針對幼兒園所之問題提出三方面的建議,在強化幼兒營養知能、建立健康的飲食行為方面,主要作法包括加強幼兒飲食營養教育、落實幼兒健康飲食行為教育、加強教保人員營養知識、態度及行為;在營造健康的飲食環境方面,作法包括訂定幼兒園所供餐及點心營養標準、聘請營養師負責幼兒園餐食及點心菜單設計及供應;此外,將飲食營養教育和餐食及點心供應品質納入幼兒園評鑑及輔導項目,且佔有相當比重。
    Both nutrition education and the dietary environment have a great influence on diet habit development of children. Based on recent surveys, the dietary intake of Taiwanese preschoolers does not meet dietary recommendations of experts. Nutrition education of preschoolers is often neglected by caretakers at preschool/daycare centers. Nutrition knowledge, attitudes, and dietary behaviors of caretakers were also not satisfactory. Caretakers lack nutrition education training; and resources for dietary information and continuing education are also insufficient. In addition, the nutritional quality of meals and snacks provided by preschool/daycare centers do not meet nutritional standards. To improve this situation, suggestions were given to preschool/daycare centers covering three aspects. First, children’s nutrition knowledge and ability to develop healthy eating habits should be enhanced through nutritional education focused on knowledge and behaviors for preschoolers and caregivers. Second, a healthy dietary environment in preschool daycare centers should be established by setting nutritional standards for meals and snacks and requiring registered dietitians for meal planning. Third, nutrition education and food service quality should be actively incorporated into the overall preschool/daycare center evaluation system.
