Abstract:	飲食專業街的形構反應了時空壓縮的世界想像，鄉土、傳統爲現代化召喚出來成爲產業的形式生產，與記憶意象嫁接以匯聚趕集的方式被促銷。深坑豆腐街的豆腐江山原應是地緣、人緣、業緣、文化緣等系譜建立的分類秩序及生態扣鎖，而今卻斷裂成物品的集結體系，資本的生產偉力摧毀了傳統勢力的碉堡，拼湊的雄渾使得食品製作與販賣失去了在地的獨特性，口味的系列化促使消費者對原味價值的反轉，物體系的連結系列逐漸逸脫了認同的模範，系列差異成了寄託著人們的消費夢想與實踐多元的宏偉組構，吃的現實也成爲一種文化虛構。 The emergence of food streets reflects an imaginary world of compressed time and apace. Localism and tradition have created a form of production for modernization. The world of Shenkeng Bean Curd Street represented a classified order established by land, people, occupation, and culture, but nowadays it has been replaced by a joint system of objects. The change of capital productivity and production means has destroyed the fortress of traditional Influence. Since food production has lost its local uniqueness, the consumer's attitude toward the value of original test has thus altered. The connection of the system of objects has gradually been away form the norm of Identity. The serial difference has become virtual reality to which people's consumption dream and practice consign, and the reality of catering has also turned out to be cultural fiction
